Nokia calls its Nseries handsets multimedia computers and most people see them as multimedia- and feature-rich mobile devices. As its name implies, the XpressMusic range refers to Nokia's handsets with a primary focus on music. For example, the most recent 5610 XpressMusic and 5310 XpressMusic models come with dedicated music keys. In the case of the 5610, it also has a dedicated audio chip built in.

As to which is better, that will depend on what you are looking for in a handset. If you listen to music frequently, then of course the dedicated music buttons will come in handy. But if there are other features you need, such as GPS, Wi-Fi and HSDPA, then choices like the N95, N82 may be more suitable for you.
